French Fries

Description

The key to great fries is soaking out the starch followed by twice deep frying.  First frying at lower temperature to brown and cook, then a second frying to get them golden brown and crip.

Ingredients

2-3 potatoes per person, depending on size.  I recommend a high starch potato such as Russet

Instructions

1.  Peel potatoes, leaving the skin on the tips.  Cut into fries using a mandolin, fries cutter, or knife.
2.  Heat oil in deep fryer to 165C/325F and cook fries in batches for 5-7 minutes until just starting to brown.  Reserve on paper towels and continue batches.
3.  Increase oil temperature to 180C/350F and cook fries again in batches until completely cooked, about 3-4 minutes per batch.
Season well with salt.
