A Gentleman's Burger

Description

The last burger recipe you will ever need.  This one is adapted from a cookbook by the late chef James Beard.  If you would like fries with
that, here is a recipe.
Serves 4 men

Ingredients

Buns:
.5 tsp dry yeast
.5 cup milk
1 Tb sugar
1 Tb butter
1 egg, separated yolk and white
.25 tsp salt
1.5 cups flour
optional: sesame seeds and/or minced onion

Burger:

600g/ 1 2/3lb ground beef
150g/ 2/3 cup shredded sharp cheddar cheese
2 cloves garlic--smashed and minced
4 tsp Worchestershire sauce
dash Tabasco sauce
salt, pepper

Instructions

Buns:
1.  Warm the milk and add yeast to soak for 5 minutes
2.  Add butter, egg and sugar to the mixture and blend at low speed with paddle attachment for 2 minutes
3.  Add half the flour and salt.  Continue blending for another 2 minutes.
4.  Switch to a dough hook on the mixer and add remaining flour.  Mix for 5-7 minutes.  Alternatively, mix in by hand and knead for same amount of time.
5.  Add mixture to large oiled bown and cover with plastic wrap.  Allow to sit for 2 hours.
6.  Punch down the dough and portion into 90-100gram/ pieces.  Form into round bun shape (I use an 8cm/3.25" metal ring shape it).  Cover with a towel and allow to rise another 2 hours.
7.  Preheat oven to 175C/350F.  Create an egg wash with the saved egg white and 250ml/.25cup water.  Brush each bun top with the wash and add optional sesame seeds or minced onion.
8. Bake for 15-20 minutes.  Remove from oven and allow to cool.

Burger:
Combine all ingredients and season with salt and pepper.  Form into 4 equal patties.  As above with the buns, I use an 8cm/3.25" metal ring to shape the burgers.  Pressing each burger into the shape helps to keep it intact during grilling.  Grill for 3-4 minutes each side.

Final Plating:
Cut each bun in half, brush with a bit of olive oil or butter and toast on the fire for a couple minutes.  Assemble your burger with favourite toppings and retreat back to your cave to enjoy.
